This brine recipe will make 400ml (13.5 fl oz) of brine. 400ml was chosen because it is enough brine to top off a 1 quart / 1 litre mason jar of vegetables. Also, if your water bottle holds 500 ml, 400ml will give enough extra space for better shaking and dissolving of the salt. You can also use a 1 litre (32 fl oz) water bottle, or any sealed container that holds at least 500ml (16 fl oz).

Homemade Brine - 400ml - 2% Salt Ratio
This recipe will result in 400 ml (13.5 fl oz) of brine with a 2% ratio of salt to water. Use with fermentation recipes where you are also using a salt to vegetable ratio of 2%.
Equipment
- 1 Measuring Cup
- 1 Kitchen scale
- 1 Water Bottle Sized at 500 ml to 1 L (16 fl oz to 32 fl oz)
- 1 Very small bowl for weighing salt
Ingredients
- 400 ml Distilled Water 13.5 fl oz
- 8 g Salt 0.28 oz. Package lists the only ingredient as salt, and nothing else.
Instructions
- Measure 400ml (13.5 fl oz) of water in measuring cup. Transfer water to water bottle.
- Place very small bowl on kitchen scale and press the tare or zero button to ignore the weight of the bowl. Then add salt to bowl until the scale reads 8 grams or 0.28 oz.
- Transfer salt to water bottle.
- Tighten lid on water bottle. Shake water bottle until salt dissolves.
